  • carrots - 9.5 oz (270 g)
  • tomatoes - 2 pcs. (250 g)
  • onions - 0.9 oz (25 g) (white, suitable for salad)
  • green peppers - 2.2 oz (60 g)
  • olive oil - 3 1/3 tbsp (50 ml) + for sprinkling
  • lemon juice - 2 tbsp.
  • salt - 1 tsp.
  • ginger root - 2 cm (peeled)
  • sesame oil - 1 tbsp.
  • sesame seeds - for sprinkling
  • ice - 9 oz (250 g) crushed
  • water - for dilution (optional)

Gazpacho is a cold summer soup made mainly from raw vegetables, but there are also options with the addition of fruit.

This carrot gazpacho is interesting, not only because it contains carrots, but because of the intertwining light exotic notes that diversify the traditional Spanish taste.

For the carrot gazpacho you will need a device like a nutri blender or one that can really blend the hard vegetables and make them perfectly smooth and tender.

The carrots are peeled, cleaned and grated to make them easier to blend. The tomatoes, peppers, ginger and onions are chopped and everything is put in the jug of the appliance.

Add the flavoring ingredients - lemon juice and salt, as well as olive oil and sesame oil. The ice is crushed and also added into the jug.

Blend for about 4 minutes or until the gazpacho is perfectly smooth.
