How to make
Cherry Gazpacho is an appetizer that is served in Spain on special occasions such as weddings and baptisms. It has an interesting taste, unusual for us, but I am sure that if you try it it will surprise you with its sophistication and aroma.
It is very easy to prepare in a few simple steps.
Peel the tomato, and chop it, together with the onion and pepper.
Put them together with the cherries in a blender or food processor and turn it on at maximum speed to make a fine puree.
If you use a blender, you will have to strain later as there will be fine skins from the cherries. The mixture should be as smooth as possible.
If desired, you can dilute with a little water and adjust the salt to your taste. There should be a perfect contrast between sweet and salty to make the flavours stand out better. I did not write the exact amount of salt in the recipe because it depends on the sweetness of the cherries you use.
Pour the gazpacho into small elegant cups and crush a little goat cheese in each. It is good for it to be well cooled before serving.
Optionally decorate with fresh mint leaves. Enjoy your meal!
