"Refreshing, tasty and filling Lithuanian cold borscht."

Ingredients

  • kefir - 4 cups (1 L)
  • beets - 2 pcs. boiled
  • cucumbers - 1 pc.
  • dill - 2 tbsp. chopped
  • spring onions - 2 tbsp. chopped
  • salt
  • black pepper - 1 pinch

How to make

Grate the beetroot and cucumber coarsely, put them in a suitable container or pot.

Add kefir, finely chopped dill, season to taste with black pepper and salt.

If it is thick, you can dilute it with milk or mineral water, but it should not be too liquid. Served with sour cream, boiled egg and baked potatoes.

As an addition, you can boil a few potatoes until half done with the skin and then fry them in oil.

This is not the typical warm borscht and is somewhat reminiscent of cold cucumber soup.
