How to make
Blanch the tomatoes in boiling water, then dip them in icy water. Peel and clean them from their seeds. Peel the cucumber and onion, clean the pepper of seeds.
Cut the vegetables into small cubes and grind them in a blender. Add the cleaned from its skin and pit avocado. Grind to a smooth paste again. Season with lemon juice, salt, olive oil, ground black pepper and sugar to taste.
In a dry pan, fry the bacon, then drain it on paper towels. Distribute the prepared gazpacho into bowls and garnish with fried bacon and diced tomatoes.
