How to make
Peel an avocado and finely chop it. Put in a blender. Mix it with the peeled, washed and sliced cucumber, pepper and coriander.
Add garlic, onion, salt, ice and 1 1/5 cups (300 ml) of water. Blend all of the ingredients for the healthy soup.
Add vinegar and olive oil and blend again. You can season the finished cold soup with more salt or add water, if necessary.
If desired, serve the delicious gazpacho sprinkled with drops of olive oil and avocado.
