Ingredients

  • lamb - 1 large piece, about 4.5 lb (2 kg)
  • soya sauce - 1/2 cup
  • honey - 1 tbsp
  • wine - 1 cup red + 2 cups for roasting
  • garlic - 6 cloves, pressed
  • coriander - 1 tsp ground
  • cumin - 1 tsp ground
  • cinnamon - 1/2 tsp
  • pepper - to taste
  • red pepper - 1 tbsp
  • lemons - juice of 1
  • mustard - 2 tbsp coarse
  • butter - 1 package, melted
  • salt - to taste

How to make

Mix together all the products and spices for the marinade. Coat the meat thoroughly, put it in a crock stew with all the marinade. Leave it to stand for 24 hours, and occasionally water it with the marinade.

Preheat the oven, top with 2 cups of wine on the lamb, soak thoroughly with marinade again, add salt and let it to cook for 3-4 hours. Top off with a little wine and hot water and continue to bake until the meat is completely done.

Finally, you can remove the lid and roast it for a while. Serve the lamb in a clay pot with a salad of your choice.
