Ingredients

  • zucchini - 17.5 oz (500 g)
  • potatoes - 4, medium
  • eggs - 2 + 2 for the breading
  • parsley - 2 tablespoons chopped
  • salt
  • black pepper
  • flour - as needed
  • breadcrumbs - for rolling

How to make

Clean and grate the zucchini. Gently squeeze out the excess liquid. Mix them with pre-cooked and mashed potatoes. The mixture with zucchini and potatoes is mixed with 2 eggs, parsley, salt and pepper and flour so that patties can be shaped.

The amount depends on how well you drained the zucchini and whether your potatoes have a high starch content. Shape medium sized patties with your slightly oiled hands. Roll them in breadcrumbs and beaten eggs and drop to fry in plenty of preheated oil.

Serve the patties and potatoes warm, garnished with salad.
