How to make
Heat the olive oil and fry the finely diced onion, then add peppers, zucchini and peeled and finely diced potatoes. Remove the fried vegetables from the heat and add the paprika.
Add the washed rice, return to the heat and stir until each grain is seasoned well. Add some warm water, salt and black pepper to taste. Top up with a little water until the potatoes are cooked and the rice is fully ready.
Towards the end, add the crushed garlic cloves and diced tomato. Leave the rice with zucchini and potatoes to cook until they're left in just oil, while stirring gently.
Remove from the heat and mix the finely chopped dill in.
