How to make
Add the salt, chopped eggplant and zucchini slices, and let them drain. Fry them slightly. In the same oi, l saute the finely chopped onion. When soft, add 4 peeled tomatoes, cut into slices.
In a baking dish, arrange a row eggplants, pour over them onions and tomatoes and top with zucchini. Each row is sprinkled with grated cheese.
Cover with a row of thin tomato slices and sprinkle with breadcrumbs. Bake for about 30 minutes in a moderate oven.
