How to make
Clean the lamb sweetbread and soak them for 2 hours in water with vinegar. Drain and blanch them for 5-10 min. in boiling salted water.
Drain again and cut coarsely. In heated oil, saute the chopped onions and garlic for 5 min. Add the chopped peppers and saute briefly.
Add the spices, stir and pour into a tray. Distribute the sweetbread on top and stir slightly. Pour in the wine and put to bake in a moderate oven until the sweetbread soften completely.
