How to make
Wash the sprouts, clean and carefully carve them with a sharp knife. Put them in oil and a little salted water, stew until tender. Then drain them well and place them over a plate.
Boil the potatoes and mash them. Beat mayonnaise with mustard, lemon juice and season it with salt.
Mix the potatoes with mayonnaise. Carefully add the sprouts. Garnish them with tomatoes and serve.
