Ingredients

  • potatoes - 12.5 oz (350 g)
  • green onions - 4 sprigs
  • lettuce - 1
  • cucumber - 1/2
  • butter - 1/3 cup (75 g)
  • vegetable broth - 3 1/2 cups (850 ml.)
  • salt
  • black pepper

How to make

On very low heat, melt the butter and add the peeled and diced potatoes, onion, sliced into thin strips lettuce and finely chopped cucumber. Mix well and place a lid on, then after about 10 minutes, pour in the broth and season with salt and pepper.

Turn up the heat and let the soup boil. Reduce the heat and simmer for 20 minutes.

Let it cool well, and then puree the soup. Serve this soup sprinkled with finely chopped green onions.
