Rosemary is a spice which adds a pleasant and fresh flavor to the dishes it is put in. The spice is often used in Mediterranean cuisine. The leaves of rosemary are used, which can be fresh or dried.
Often it is used to season soups, roasted meat, marinades. It is much suited for game meat, and some chefs use it to season fish as well, even though differences of opinion can be seen in this regard.
There is a permeating idea that rosemary ruins fish and should not be used with them. Ultimately, if we don't try it, there is no way for us to know whether we will like it.
Rosemary provides an extremely pleasant flavor to meat soups, as well as meatless ones. In general, we can't say whether it is a suitable spice for sweet or salty dishes, because it can be found in both types of recipes.
Its flavor is suitable for seasoning potatoes, cabbage, tomatoes. In many dishes you can find a combination of rosemary, oregano and salvia - equal amounts of all spices.
It is not recommended to put rosemary in a dish with basil or parsley, since rosemary has an incredibly strong flavor and will suppress the flavors of the other spices.
Let us offer you 2 recipes with the ever flavorsome rosemary. The first one is very easy and can be served as a main course or a side dish to roast meat. You will need potatoes, rosemary, black pepper, salt, oil, just a tiny bit of savory, 2 garlic cloves, 1/2 cup beer and the same amount of water.
Peel and chop the potatoes, then place them in an oven dish, sprinkle rosemary on top, salt, black pepper and a tiny bit of savory. Stir and pour in the oil. Throw in the garlic at the end; it is best to crush it with a press. Pour in the liquids and cover with aluminum foil, making a few holes with a fork in it.
Bake in a moderate oven for about an hour. If you feel that the liquid is too much for the amount of potatoes, simply reduce it. If you want to prepare a main dish, add pieces of raw chicken and season all of the ingredients with a little paprika, then continue cooking in the same way.
Our next proposal is for a dessert. For it you will need peaches, brown sugar, water and a few sprigs of rosemary. Wash the peaches and halve them, then remove the pits.
In an oven dish, place a few sprigs of rosemary, arrange the fruits on top and sprinkle with a few spoons of sugar. Sprinkle it around the fruits as well.
Place a few more sprigs of rosemary on top of the sugar. Pour water in the dish and put it in the oven. Bake until the fruits get roasted - no more than half an hour. You can serve it with whipped cream.
