Meals for diabetics can be delicious and contain many useful products. One such dish is a ratatouille prepared with vegetables and eggs.
For preparation are needed 6 eggs, 2 zucchini, 1 green pepper, 1 celery root, 4 tomatoes, 1 bay leaf, 1 pinch, 1 onion, rosemary, 6 tablespoons of olive oil, salt and pepper to taste.
Cut the zucchini into cubes, also cut the celery root into cubes. Remove the seeds of the pepper and cut it into small pieces.
The tomatoes are cut into slices and onions - finely. In a deep skillet, over medium heat, warm 4 tablespoons of olive oil.
Fry the onion for one minute, add the bay leaves, rosemary, salt and pepper. Add the celery, green pepper, zucchini, stir well, quickly place the lid on and fry for four minutes.
The vegetables are transferred into a bowl, to remove the bay leaf.
Put the pan back on the stove, pour 2 tablespoons of olive oil in and add the tomatoes, salt and sprinkle with pepper. Let the tomatoes cook until they begin to fall apart.
Then, add the remaining vegetables, stir and leave on the stove two minutes. On the Ratatouille, crack six eggs, then evenly distribute over the surface, so as to obtain a poached egg effect.
Top with a lid and fry until the whites are white and the yolks still remain runny. Serve immediately.
There is a winter salad suitable for diabetics. It takes 1 beetroot, 2 pinches of ginger root, 1 garlic clove, 2 pinches of basil, 1 carrot, 1 stalk of celery, 3 tomatoes, 2 tablespoons of pumpkin seeds, 4 leaves of lettuce.
Grate the beets and carrots, cut the stem of the celery finely. Mix, stir and add the ginger, chopped garlic, basil, chopped tomatoes and lettuce, torn into large pieces. Sprinkle with pumpkin seeds and serve.
