Roast pork is a dish suitable for welcoming relatives and guests. It is easy and quick to prepare. The Perfect pork roast tempts with a crispy crust and is served with mushroom sauce and wine.

One of the most important conditions for pork roast, is that the meat must be served well-done. Undercooked pork poses a health risk. For this purpose, the pieces of meat are roasted in the oven with or without the bones (optional). The process is slow and the cookware in which the meat is roasted is not covered.

Choose fresh meat at the store. It is stored in the freezer. When cooking, first leave it in the refrigerator to defrost, then take it out and leave it to drop its temperature to room temperature. For meat under 4.4 lb (2 kg), 12 hours in the refrigerator is enough, those up to 6.6 lb (3 kg) - 24 hours and for bigger quantities, about 60 hours are needed.

Pork roasting time varies depending on whether the meat is bone-in, boneless, or made into a roll. Meat with bone is roasted for 30 minutes at a temperature of 390°F (200°C). For each additional kilo of meat, an hour of roasting is added.

Boneless meat does not need additional roasting. If the meat is wrapped as a roll, then each piece is roasted at about 390°F (200°C) for 30 minutes and for each subsequent kilo it is roasted for another 50 minutes.

The doneness of the meat is checked frequently. If the juices run clear when it is pierced with a skewer, it's perfectly cooked.

Pork in foil

To prepare three portions of pork roast, you will need: 1.3 lb (600 g) of pork, black pepper, 9 oz (250 g) of mushrooms, 1/2 onion, 4-5 tbsp. of oil, 2 tbsp. of flour, 1 cup of white wine, 1 cup of water or sauce from the roast, 1/2 tsp. of salt, 1/2 tsp. of black pepper and lemon juice.

Method of preparation: The piece of pork is rubbed well with black pepper and placed in a container with fat and water. Cover it with aluminum foil on top. Bake at 390°F (200°C) for 40 minutes.

When ready, the foil is removed. It is periodically turned, by being poured with sauce. Baking continues, until a golden crust forms. When this is done, take it out and cover it with aluminum foil.

Mushrooms and onions are finely chopped and sauteed in the preheated oil. Add the flour and dilute it with the wine and water. Season with salt and black pepper and boil, until the vegetables soften, about 10 minutes. Remove the sauce from the heat and season with lemon juice.

The meat is cut into thin slices and distributed on plates. Pour the sauce on top, decorate with a red vegetable and serve it warm.
