They call it trout lean because it contains almost no fat. This delicate fish is one of the best choices for preparing a St. Nicholas Day dinner. Its advantage is that it does not require much time for frying or baking.
The fastest and easiest way to prepare trout is to fry it in a pan. The cleaned fish is cut into portions, salted and rolled in flour, then placed in well-heated fat. In some places, instead of traditional white flour, the fish is rolled with corn flour.
If you want to preserve the vitamins and minerals as much as possible of this healthy fish, you can choose to grill it. For this purpose, the cleaned fish is washed with lukewarm water, after which it must be dried.
Season the fish meat with salt and black pepper. Optionally, you can spread the trout on both sides with freshly squeezed juice of one lemon and olive oil (or vegetable oil). The fish is left like that for at least half an hour. Those who are more patient can wait an hour. Then cook it on the grill.
The third option is to bake the trout in the oven. After seasoning the meat with salt black pepper, cover the fish with lemon slices and chopped dill and/or parsley (optional).
Drizzle it with olive oil and bake it. It takes no more than 30-40 minutes. It will be even more tender if the fish is boiled in salted boiling water for about 4 minutes before baking.
Another option for the oven is to add garlic and sliced tomatoes to the trout in addition to slices of lemon. Arrange sliced onions on top.
Add a little water and fat and bake again in a preheated oven (200-220 degrees) for about 30-40 minutes. The trout can be baked with a little white wine. Baking can be done in foil, baking bag or directly in a baking pan.
Suitable trout spices include devesil and tarragon. Practical cooks use a mix of fish spices.
When serving, the trout must be garnished with lemon quarters. Suitable for garnish are stewed vegetables or light mashed potatoes.
