All parts of the plant are used in cooking - the underground part, root and leaves. The celeriac head is used to make soups, but you can also add the stalks, which are added at the end of cooking. Keep in mind that when you cook celery, the finer it is, the stronger flavor will be released from it. The chopped leaves add an amazing taste to a cabbage salad.
With celery you can flavor various fresh salads, meat and vegetable dishes. From the stem of a celeriac you can make a juice rich in vitamins, which, however, must be mixed with other products, because its taste is very intrusive. It is best for the fresh celery juice to contain carrots, beets, apples or oranges.
The celeriac head can be roasted (with cream, for example) or stuffed with minced meat and vegetables, then sprinkled with yellow cheese and roasted until it's done.
