All you need is egg whites, powdered sugar and lemon juice. It is now a matter of taste and desire whether you want to diversify the white color of the icing with edible food paints. It also depends on what you need it for.

How much icing you need depends on the amount of products you will use. About 3-4 egg whites are usually needed for the gingerbread house. Start by separating the egg whites very carefully from the yolks. There shouldn't be any egg yolks in order to be able to beat the egg whites well into a foamy white mixture.

Once you have separated the egg whites and beaten them well with a mixer, add 2-3 drops of lemon juice to them and continue to beat the mixture and gradually add powdered sugar using a tablespoon. The amount of powdered sugar is very relative - it depends on how liquid you want the sugar icing for the pastries to be.

If you want it thicker, add more powdered sugar and if you add too much of it, you can always add lemon juice. Beat the icing very well to get a smooth mixture. When you lift the mixer, tips should be obtained.

You can divide the finished sugar icing into smaller bowls and color it in different colors. You can apply with a decorating tube or another suitable tool.
