- The shells should be closed:

Fresh mussels have tightly closed shells.

If the shell is slightly open, gently tap it – if it closes, the mussel is alive and fresh. If it doesn’t react, the mussel is not fit for consumption;

- Smell:

Fresh mussels have a pleasant, slightly salty, sea scent.

- Weight:
