These candied hazelnuts are very easy to make, but they are also extremely delicious. It is ideal to use the chopped pieces of caramelized hazelnuts with ganache in cakes. Hazelnut candies taste amazing.

How to make caramelized hazelnuts?

First, toast the hazelnuts. Put them in a pan and toast them over medium heat. Stir them almost every 15 seconds so that they do not burn. They can burn easily! Toasting them does not take much time, only 3-4 minutes are needed. When they become golden brown and fragrant, remove the hazelnuts from the heat and set the pan aside (if you are using raw nuts, it will take a little longer to toast them).

Next, caramelize the sugar. Place the sugar in a large pan over medium heat. Do not stir, but swirl the pan so that the sugar melts evenly. If you stir, the sugar will crystallize (if you see sugar crystals forming on the edges of the pan, you can brush them with a pastry brush dipped in cold water to prevent crystallization).

Then add the hazelnuts and remove the pan from the heat. Make sure that all the hazelnuts are covered in caramelized sugar. Place the caramelized hazelnuts on the parchment paper and level them with a spatula. Finally, chop into small pieces. Enjoy!
