Sesame seeds can also be used in the preparation of bread, baguettes, biscuits and breadsticks. It is a main ingredient in Asian cuisine and is used in the preparation of many dishes - from sushi to soups.
Also in cooking, it is especially suitable for inclusion in breadings when preparing crispy fried chicken bites (can also be made of white cheese, yellow cheese, vegetable, etc.) covered with crispy panko or breadcrumbs.
When breading the chicken, by alternating dipping first in flour, then in egg and then in breadcrumbs (with sesame seeds included), you should always have a wet hand and a dry hand. This is a technique that serves very well.
For the sesame seed breading for about 1.8 lb (800 grams) of chicken fillet, cut into pieces, you will need:
- 1/4 cup all-purpose flour
- salt and freshly ground black pepper
- 2 eggs
- 1/2 cup panko breadcrumbs
- 1/4 cup white sesame seeds
- 2 tbsp. black sesame seeds (or white)
- vegetable oil (for frying)
To bread the chicken in a bowl, first season the flour with a generous pinch of salt and black pepper.
In another bowl, beat the eggs with a tablespoon of water.
In a third bowl, combine the panko breadcrumbs with white and black sesame seeds, until they're evenly distributed.
First, roll the chicken bites in the flour to coat them all over, by shaking off any excess flour. Then dip them in the eggs, by turning to coat them on both sides and then transfer them into the bowl with the breadcrumbs and sesame seeds.
Cover them with breadcrumbs and sesame seeds on top, then flip and press, until the entire bite is evenly coated. Transfer them into a plate or cutting board and repeat with the remaining bites.
Then fry the breaded bites in a pan or bake them in the oven.
