Peas have an exceptional taste and dietary and nutritional qualities. Even after they've been harvested, they continue to ripen.
Pre-soak them in water for about eight hours at room temperature. For one kilogram of peas add three liters of water into a deep bowl. Place them on the hob without placing the lid on and cook for an hour and a half at medium heat.
Depending on the hardness of the water and the variety of peas, it may take longer to boil the peas - up to two to three hours. If the water evaporates, additional boiling water (must be boiling) can be added. To keep the fresh green color of the peas, add a pinch of sugar during cooking process and stir gently.
The frozen peas are boiled in the same way as fresh peas, but you must check for any harder peas that may be leftover. They're normally frozen, once the peas have been freshly picked and that way they're stay just as healthy and tasty.
Sunflower oil or oil can be added for faster cooking. The foam that may have formed is removed with a spoon.
At the end add the salt. Cooked peas can be stored for up to 2 days in the refrigerator before being consumed or you can cook some of our delicious pea recipes.
