Hundreds of soy recipes have been written featuring the universal soy, including:
- miso;
- tempeh;
- soy milk;
- tofu;
- edamame.
The beauty of soy products is that they are universal, easy to use and can offer significant health benefits. The hard soybeans are similar to beans and are prepared in the same way.
You can replace the meat in lean kebabs, lean stews, soups and more with soy bites. They turn out amazing! You can replace the ground beef in the moussaka with soybean mince.
1. Tofu (Soy cheese)
Tofu is made from soy cottage cheese, that is pressed into blocks. Like other soy products, tofu provides all the essential amino acids, which are needed for human health, so it is a great meat substitute in a diet;
2. Asian Peanut Dip
Blending silken tofu with peanut butter creates an incredibly creamy dip, which is high in protein and is a source of heart-healthy fats thanks to the soy and peanut butter. Serve it with carrot sticks or apple slices, or use it as a sandwich spread;
3. Salad with bulgur, edamame and cherry tomatoes
Edamame are fresh, green, soybeans with a crunchy texture and nutty flavor. They are available both fresh and frozen, in the pod or in the shell. Toss them into salads to add protein and fiber, as well as a little color, or munch on these tasty grains as a healthy, low-fat snack;
4. Milkshake
Increase the nutritional value of the milkshake by using soy milk and soy ice cream instead of whole milk products. Note that soy milk contains only about a quarter of the calcium of whole milk, but a number of soy milks are fortified with calcium, so check the nutrition label on the package.
