The mixture is poured over the bread, a few pieces of butter are placed on top and it is baked like a regular pie.

When it is soaked well, add 5 egg yolks, beaten with salt, as much black pepper as you like and 2.6 oz (75 g) of melted butter. Everything is mixed well until a homogeneous mixture is obtained. Add 4.4 oz (125 g) of grated yellow cheese and finally the whites of the five eggs, beaten until a smooth mixture is obtained. The resulting mixture is stirred and poured into a deep container - a sponge cake or souffle mold, which has been previously greased with butter and sprinkled with flour. Sprinkle another 4.4 oz (125 g) of grated yellow cheese on top. Bake for 20 minutes, initially in a high heated oven, by gradually reducing the heat to moderate. It is not removed immediately from the oven because the sudden change in temperature causes the souffle to flatten immediately.
