From ancient times the Egyptians accepted mushrooms as food for the Gods, believing that their consumption would provide them with an immortal life, which was only for the pharaohs. The others were not allowed to touch this divine food.

Centuries later, in the early 17th century, mushrooms began to be grown in France. In his palace in England, George IV grew cultivated mushrooms in a separate building for this purpose.

The Prince Mushroom (Agaricus augustus) is a subspecies of the field mushroom family. We also call it Giant Mushroom. The period when it is picked is from the end of July to the still warm October. It is also available on the stands in grocery stores.

The characteristic of this mushroom with excellent taste is its hemispherical cap, covered with ocher-brown or golden triangular scales. The edge of the cap is initially curled inwards, later straight and often cut in older specimens.

The lamellae in the young specimens are first white, then have a pink hue and finally dark brown.

The The Prince Mushroom stump is thick and rooted in the soil and it has a cylindrical shape up to the cap. The upper surface of the ring is slightly grooved and the lower is fluffy, with a yellowish color and warts on the edge.

People from the East have long discovered the valuable nutritional properties of the mushrooms. Their basic composition is similar to that of vegetables. They are a suitable and valuable food for people on a diet such as vegetarians, who define them as a superfood due to the high percentage of protein - 2.78% and dietary fiber -1.08%. Proteins can be concentrated up to 13.4% and fiber - 18.2% after the water is removed.

For diabetics, eating mushrooms is a good alternative, because of their low sodium content. The lack of sugar and fat makes them suitable for this disease. The high content of zinc in field mushrooms increases the body's resistance, they are also rich in phosphorus, potassium and calcium.

The balance of amino acids lysine, valine, leucine, isoleucine, tryptophan and threonine resembles the content of amino acids in eggs. Not only minerals, but also enough vitamins are in the composition of The Prince Mushroom, which makes them good "allies" of any dish. Vitamins A, K and D have the highest content.

These mushrooms are an excellent low-calorie food that can be prepared on its own or as a side dish, in sauces or pastries.

Their ability to induce fermentation contributes to their participation in the preparation of beer, wine and bread. Their preparation and the way of technological processing is important for the good end result of the dish.

We need to know that the first rule before cooking them is that the mushrooms are not washed, but cleaned with a brush from the stuck dirt (ash). During heat treatment, they release water and when they are washed, they absorb three times as much of it.

I easily clean them by putting them in a plastic bag and adding cornmeal in it - 2-3 tbsp. After shaking it vigorously, the mushrooms are cleaned and ready for heat treatment.

The second rule for them is that when cut, they quickly lose their color and flavor, so between cutting and heat treatment should not take more than 10-15 minutes.

Marinated Prince Mushrooms can be refrigerated for up to a week. They are a great addition to a dish, hors d'oeuvre or as a stand-alone appetizer.

The easiest recipe is stewed prince mushrooms with butter, black pepper, thyme and a clove of garlic or baked in the oven, by adding cheese to them at the end of baking.

Dried prince mushrooms last the longest. The technological process of drying is practical and easy. After cleaning, string them at a distance from each other and dry them in a shady and ventilated place.

Before their heat treatment, the dried mushrooms are soaked in salted lukewarm milk.

Blanched field mushrooms, which are made at home are boil in salted boiling water to which lemon juice is added. Placed in jars, they last in the refrigerator for 5 to 7 days.

They are great both stuffed and in dishes, soups, pastries and sauces.

The prince mushroom is a delicacy and the recipes with this mushroom are very different according to preferences and taste. We recommend that you try one of the recipes for:

- chicken with mushrooms;

- stuffed mushrooms;

- or mushroom risotto;
