"Every good cook needs to have a jar of dried tomatoes in olive oil in their drawer."

Ingredients

  • tomatoes - 9 lb (4 kg) Roma variety
  • olive oil - 1 tablespoon or oil
  • garlic - 5 - 7 cloves
  • salt - 3 tablespoons
  • sugar - 3 tablespoons
  • black pepper - grains
  • thyme
  • oregano

How to make

Wash the tomatoes and cut them into 4 or 6 pieces. Arrange them in a tray with baking paper. Sprinkle with oil, salt and sugar.

Dry them in the oven at 230°F (110 °C) for 5-6 hours or until they wrinkle and get a crust.

Arrange the tomatoes in a dry jar, while putting garlic and spices in between them.

Top the jar off with oil or olive oil at the end. Be careful with the amount of oregano you use because it starts to get bitter after the jar sits awhile.

You can also use the oil released by the tomatoes during baking.
