How to make
Put the boiled coffee to heat with half the sugar. Peel the pear and cut it into thin slices, add these to the coffee. Cook until the pears soften.
Arrange the boiled slices at the bottom of the form in which you intend to make the dessert. Distribute the rest of the coffee into bowls or forms.
Soak the gelatin in 2 tbsp (30 ml) of the milk and leave it to swell. Then melt it in a water bath or in a microwave.
Boil the rest of the milk with the dairy cream, vanilla and remaining sugar. Leave the mixture to cool, add the gelatin and stir.
Once the cream mixture has cooled completely, distribute it into the forms. Put the panna cotta away in the fridge for at least 4 hours. Serve chilled and inverted.
