"An extravagant, rich and aromatic fish soup that you can make in less than an hour with a pressure cooker."

Ingredients

  • for the fish heads
  • fish - 5.5 lb (2.5 kg), heads
  • parsley - 1 bunch
  • lovage - 1 bunch
  • celery - 1 bunch
  • onions - 2 heads
  • carrots - 2
  • bay leaf
  • black pepper - grains
  • salt - to taste
  • for the soup
  • potatoes - 4 medium, diced
  • potatoes - 7 - 8 small, whole
  • carrots - 2 - 3, diced
  • peppers - 2, green, diced
  • onions - 1, finely chopped
  • tomatoes - 1 grated
  • parsley
  • lovage
  • celery
  • thyme
  • black pepper
  • spices - 1 tbsp, 10 veggie mix
  • spices - 1 tbsp, for fish
  • oil - 3 tbsp

How to make

For the fish heads:

Put the listed ingredients for them in a pressure cooker. After it reaches the right pressure, let simmer for 20 min.

Once you open the pressure cooker, take the heads out and debone them, strain the broth in a pot and put it back on the stove.

For the soup:

In the pot on the stove, add the onions and whole potatoes. 5 min. after boiling point, add the carrot, pepper and diced potatoes.

Once it comes to a boil again, wait 10 min. and take the whole potatoes out. Add the oil, tomato and all the spices - boil for 5 min. with them.

Mash the whole potatoes and return them to the pot. Flavor your soup with a squeezed lemon and remove from the stove.
