How to make
Make a mixture from the vegetable oil, mustard, Worcestershire sauce, vinegar, cayenne pepper, cumin and black pepper. Mash the garlic, cut it finely and add it to the mixture. Salt it.
Smear the well washed meat everywhere with the resulting mixture and leave it in a cool area for at least 2-3 hours.
Put it in a suitable container, pour in about 2/5 cup (100 ml) water and bake for 2 hours at 280°F (140 °C) under foil.
Remove the foil and crisp for another 15-20 min. at 390°F (200 °C). After you take it out of the oven, make cuts along the ribs and bake them on a well-heated grill or barbecue for 1 min. per side, while basting them with the oil from the baking container.
Serve with torn parsley or coriander, toasted bread and dry red wine.
