How to make
Wash the zucchini well and cut them thinly using a vegetable peeler, salt them with 2 pinches salt, stir and leave to drain away their juice for 1 hour.
Pour the flour, spices and a little salt in a clean plastic bag. Add the drained zucchini to it, shake the bag vigorously, so the flour mixture sticks to them.
Heat the oil and prepare a container with icy cold water. Dip each zucchini slice first in the cold water, then place it in the heated oil, arranging them next to each other so they don't stick.
Frying these zucchini chips is much quicker than frying zucchini the usual way, so keep your eyes on the pan and fry to the desired crisp.
After you take them out of the oil, put them on paper towels, to drain away the excess oil.
These crunchy and tasty zucchini chips taste great warm or cold, served with a Greek sauces or Tzatziki and a mug of beer.
