For this jam, use oil-giving, highly fragrant red roses. You can use roses of other colors but they must be oil-giving.
Remove the calyxes and stamens from the flowers, then cut off the white, hard parts of the petals. Cut them into strips (you don't have to).
Boil a runny sugar syrup, drop the rose petals in it. Boil the jam on high heat until the syrup gains the desired consistency. Add the geranium and 1 tsp citric acid.
The dark green jam is going to turn a bright red. Keep boiling another 2-3 min. with the citric acid.
* You can boil a jam using the same quantities and ratios out of acacia and violets.
