How to make
For this aromatic jam, I use the petals of oil-bearing roses that bloom in mom's garden.
I clean the petals, put them in a sieve and wash them carefully under a jet of cold water.
I prepare syrup from the sugar and water, which I thicken.
Then I add the pink petals, while boiling over moderate heat.
I pat the foam with a griddle spatula. Boil until the jam is no longer runny and thickens. I add citric acid dissolved in 1 tbsp. hot water.
You can optionally add a few drops of pink essence.
Put the jam in dry jars while hot and turn the lid down to tighten it.
The aromatic rose jam is ready.
