How to make
Mix all the ingredients for the dough. Divide it into 9 equal-sized balls.
Roll out each one into a pita about 4 1/2″ (12 cm) in diameter, smear with oil, place another pita on top, oil again, then another pita.
Roll out the 3 pitas together into one large, thin sheet. Distribute some filling on top and roll it up.
Do the same for the other balls of dough - stick them together 3 by 3, with oil in between but do not smear the top pita. Then roll them out together, put filling and roll it up.
Arrange them in a spiral shape in an oven dish. Smear with egg yolk and 2 tbsp oil. Bake to a nice color.
