  • phyllo pastry - 16 sheets
  • eggs - 3
  • yeast - 1/2 cube fresh
  • carbonated water - 4/5 cup (200 ml)
  • oil - 2/5 cup (100 ml)
  • goat cheese - 10.5 oz (300 g)

How to make

Beat the eggs, while adding the carbonated water and oil. Mash the goat cheese finely and add it.

Add the yeast and stir the mixture until yeast dissolves. Place 1 phyllo pastry sheet on your work surface. Sprinkle with the filling.

Don't overdo it with the filling because it will make it too moist and tear the spirals during cutting. Place a 2nd sheet over the 1st, sprinkle filling again. Arrange 4 sheets on top of each other, finish off with filling.

Wrap it into a roll, then cut individual pieces from it. Arrange the resulting spirals in a tray laid out with baking paper. Repeat the process with the other sheets.

At the end, if there's any filling left, sprinkle it on top. Leave the phyllo pastry in a warm area for 30 min. for the yeast to activate.

Bake in a preheated 390°F (200 °C) oven about 30 min. or until reddened.
