Ingredients

  • tripe - 21 oz (600 g), veal
  • oil - 2/5 cup (100 ml)
  • milk - 4/5 cup (200 ml)
  • paprika - 1 tsp
  • black pepper - 1 tsp
  • salt - 2 pinches
  • vinegar - 3 1/3 tbsp (50 ml)
  • garlic - 3 cloves

How to make

Put water to boil in a pot. Once boiling, parboil the tripe for 2-3 min. and immediately scrape it on the inside with a sharp knife. Then clean it on the outside as well.

If there's dirty spots, wash them or scrape them off, along with the membrane, with the knife. Wash it again very well, put it in a deep pot and pour cold water over it. Turn the stove on and let it boil, while constantly topping off with water.

Leave the veal tripe to boil for 2-3 hours. Once fully cooked, take it out of the pot, leave it to cool and cut into small pieces. Salt the broth from the tripe and boil it another 15-20 min.

To it, add the paprika, milk and oil. Mash the garlic and pour the vinegar over it. When serving the soup, first put tripe in a bowl, pour in broth and then season with the garlic mixture. Bon appetit!

Notes: If you don't feel like waiting for it to boil, you can use pre-boiled tripe from stores.
