How to make
Put the water to boil in a deep pot. Once it reaches boiling point, add the sugar, citric acid, butter and salt. Stir well and add the flour.
Stir well until all ingredients are mixed and once it starts separating from the pot it's ready. Leave it to rest a little, then add the eggs. Stir well until you get a smooth mixture.
For the syrup, pour the water, sugar and vanilla in a pot, leave to boil and thicken. While the syrup is boiling, use a pastry bag to squirt out tulumbas from the mixture in a deep pan with preheated oil and fry them.
Once fried, dip them briefly in the syrup and take them out with a slotted spoon. Once cooled, pour the cooled syrup over them.
