Ingredients

  • pork fillet - 21 oz (600 g), whole piece
  • mustard - 2 tbsp
  • cumin - 1 tsp
  • black pepper - 1/2 tsp
  • oregano - 1 tsp
  • thyme - 1/2 tsp
  • paprika - 1 tsp
  • beer - 4/5 cup (200 ml)
  • butter - 2 tbsp
  • for the glaze
  • mustard - 1 tsp
  • honey - 1 tbsp
  • ketchup - 1 tbsp
  • for the garnish
  • potatoes - 14 oz (400 g)
  • samardala - 2 tsp

How to make

Wash and dry the meat. Smear it well with the mustard. Mix all of the spices and roll the meat in them. Heat the butter in a pan and crisp the meat in it for 1 min. per side.

Transfer the meat to an oven dish and cover it with foil. Bake about 20 min. in a preheated 390°F (200 °C) oven, then lower the heat to 360°F (180 °C).

Take the meat out and smear it with the glaze. Pour the beer and pre-chopped potatoes in the oven dish. Put the pork back in the oven dish with the foil and bake about 40 min.

Remove the foil and bake another 15-20 min. Take the meat out and leave it to sit for 10-15 min. Next, cut it into slices, baste it with the sauce from the baking and serve with the potatoes sprinkled with samardala.
