How to make
Cut the zucchini into round slices, put them in a bowl, pour on salt, lemon juice, black pepper and the finely chopped parsley.
Stir and leave them as is for 1 hour. Then make the crumbing by pouring the water into another bowl, plus the flour and salt to taste.
Stir until you get a homogeneous mixture, leave it for 1 hour. Afterward, add the beaten to snow egg white to it.
Take the zucchini slices out carefully by hand and put them on a strainer to get rid of the juice. Heat plenty of oil and begin to dip them 1 by 1 in the crumbing, then fry to a nice golden crisp.
