How to make
Boil the potatoes in salted water for 5 min. Leave them to cool and grate them. Salt them, add black pepper and the egg. In a pan, braise the finely chopped onions, leeks and mushrooms.
Add the livers, cut into cubes. After they've braised a bit, add the olives, also finely chopped, then the paprika, salt and black pepper to taste. Remove from the stove and leave them to cool for a few min.
Put grated potatoes in suitable forms. Make an indentation and fill it with the stuffing. Bake at 390°F (200 °C) for 35 min.
Take them out, sprinkle with cheese and return to the oven to finish baking. It's a superb holiday appetizer.
