"I absolutely love a good pork shank, especially when baked in beer because it turns out exceptionally tender, aromatic and melts in your mouth. Hurry, or there won`t be anything left."

Ingredients

  • pork shanks - 4.5 lb (2 kg), hind shank
  • paprika - 1 tbsp, smoked
  • salt
  • black pepper
  • thyme - 1 tsp
  • olive oil - 3 tbsp
  • beer - 4/5 cup (200 ml)
  • potatoes - 10.5 oz (300 g)
  • dried tomatoes - 6, sun - dried
  • honey - 1 tbsp
  • parsley

How to make

Put all of the spices and olive oil in a bowl, stir until homogeneous and rub the pork shank with it well. Clean and chop the potatoes coarsely.

Put the pork shank and potatoes in an oven dish, add a few pieces of dried tomatoes and pour on the beer. Cover the oven dish with aluminum foil and put it in a preheated 320°F (160 °C) oven for 1 1/2 hours.

Take the oven dish out, remove the foil and pour the honey over the meat. Return to the oven for 15 min. at 360°F (180 °C) to crisp to a golden color.

The dried tomatoes are optional. I had a few left over so I used them but they're not mandatory. Finally, serve the meat with potatoes and sprinkle with parsley.

The meat turns out incredibly tender, a little fatty but really delicious. Plus, the potatoes with their light beer flavor melt in your mouth. I recommend it.
