How to cook
With a small knife grease the meat with fat - make holes in which you can put garlic cloves and black peppercorns in 4-5 places.
Take the baking pan, in which you will roast the shanks and pour the olive oil, soy sauce, ground black pepper, the juice of half a lemon, crushed 1-2 cloves of garlic, a little honey, add 1-2 tbsp. paprika and a glass of white wine.
Mix all of the ingredients well and place the shanks inside the baking pan. Spread them well with the spices that are in the baking pan. Add a few sprigs of thyme in the baking pan, a few more grains of black pepper and add a glass of water.
Cover the baking pan with foil.
Turn on the oven to 480°F (250°C) for 1 hour, then reduce to 360°F (180°C) and continue roasting for up to 3 hours.
If necessary, add more hot water into the baking pan with the roasted pork. With a spoon you can scoop the sauce and cover the shank.
Fifteen minutes before it is ready, bake it without foil.
Be careful when serving, because the oven roasted pork shank can fall apart from the bone.
