Ingredients

  • for the cocoa mixture
  • eggs - 3 yolks
  • cocoa - 1 1/3 tbsp (20 g)
  • coconut sugar - 1 2/3 tbsp (25 g), or muscovado
  • olive oil - 1 2/3 tbsp (25 ml), extra virgin
  • water - 1/5 cup (55 ml), cool
  • rice flour - 1/5 cup (70 g)
  • for the egg white mixture
  • eggs - 3 whites
  • salt - 1 pinch
  • coconut sugar - 1/5 cup (55 g), or muscovado

How to make

Mix all the ingredients for the cocoa mixture in a deep bowl.

Beat the whites with a pinch of salt to snow and add the sugar to them.

Mix well and pour the egg white mixture into the cocoa one.

Stir carefully with a spatula, so that the egg whites don't deflate.

Pour the cake mixture into a form covered with baking paper and bake 10-15 min. in a preheated 320°F (160°С) oven. Then lower the heat to 280°F (140°С) and bake about another 35 min. or until a toothpick comes out dry when you poke the cake.

Serve with a glass of milk.
