How to make
You can prepare the zucchini ahead of time in one of two ways: fried or grilled. I went with the latter.
Wash and cut the zucchini into thin strips. Marinate them with olive oil, salt and black pepper and grill them on both sides.
Put tomato juice at the bottom of a suitable container. Arrange a layer of zucchini, sprinkle with parmesan, basil, black pepper and a little olive oil. Pour on 2-3 tbsp of beaten eggs.
Arrange another layer of zucchini, pour on tomato juice and continue in this manner until you run out of ingredients. Finish off with eggs and parmesan.
Bake in a preheated oven until golden. The dish can also be served cold.
