Ingredients

  • eggs - 2
  • sugar - 1 cup
  • oil - 1/2 cup
  • yogurt - 1/3 cup
  • flour - 2 cup
  • baking powder - 1 tbsp (10 g)
  • vanilla - 1 tsp.
  • walnuts - 3.5 oz (100 g)
  • quinces - 2
  • sugar - 2 tbsp.
  • cinnamon - 1 tbsp.
  • powdered sugar - for sprinkling

How to make

The eggs are beaten together with one teaspoon of sugar in a bowl.

The oil is poured, then the yogurt is added, continuing to beat. Add the vanilla essence.

The flour is sifted together with the baking powder. It is added several times to the egg mixture, mixed with a spatula until it is completely absorbed.

The quinces are peeled, cleaned of seeds and grated on a coarse grater. They are sprinkled with sugar and cinnamon, then mixed.

Half of the cake mixture is poured into a pre-greased and floured cake tin.

The grated and flavored quinces and the walnuts, broken into smaller pieces, are distributed on top in an even layer. Next comes the remaining cake batter.

The quince cake is baked in a preheated oven at 360°F (180 °C) for 40 minutes.

When the walnut and quince cake is ready, let it cool, sprinkle with powdered sugar and cut into pieces.
