How to make
Peel the pumpkin, cut it into medium-sized pieces and put it in a tray.
Peel the onion, cut the tomato, carrots and put them in the tray.
We salt them, add olive oil and water so that they do not remain dry.
Roast for about an hour or until soft.
After they are roasted, blend them and if necessary, add water to the pumpkin soup.
We serve with some cheese and pumpkin seeds on top of the cream soup.
The vegan pumpkin soup with cinnamon can also be served with croutons.
