How to make
Heat oil/butter in a pan and sauté the chopped mushrooms with a little salt and pepper. In the meantime, in a bowl, beat the eggs with salt, pepper and the curry.
Take out the fried mushrooms, pour in the omelette in the same pan. Add the mushrooms on one side once fried, cover with the other and fry until ready.
Serve the omelette sprinkled with chopped parsley.
