How to make
The spinach is finely chopped.
Beat the eggs in a suitable bowl and season with salt and black pepper.
Put the butter and oil in a hot pan, and after the butter has melted, pour the eggs (well beaten).
Fry them on moderate heat, stirring them slightly with a spatula in the direction from the end of the pan to the middle.
After 1-2 minutes, put the pesto on half of the omelette and once it melts a little, add the spinach.
The omelette is carefully folded in half, sprinkled with finely chopped chives and served immediately.
The omelette with pesto and spinach is ready.
