How to make
Grease the pan with a little oil and heat it up.
Meanwhile, in a dry bowl, mix the eggs, oats, milk, salt and black pepper. Mix until a homogeneous mixture is obtained.
Pour it into the pan and cook it over low heat for 7-8 minutes. Chop the spinach on top and grate the yellow cheese until it has melted.
Remove it from the pan and fold the omelette in half.
Serve it on the plate with the arugula, the sliced avocado, the white cheese, the blueberries and the cherry tomatoes and add the pesto on the side.
Your lovely omelet is ready!
