How to make

The homeland of this very tasty and healthy dessert is considered to be sunny Georgia. Legend has it that this delicacy was first prepared in a mountainous area in Georgia. Finely chopped walnuts were added to melted honey, mixed, then spread thinly in flat trays.

They dried them in the sun for several days until the mixture hardened, after which they were divided into pieces and served to the table. Gozinaki is a symbol of abundance and wealth. In the classic recipe this dessert is made of honey and walnuts, but nowadays it is also made with sesame, almonds, peanuts, sunflower seeds, etc.

I had only eaten store-bought Gozinaki before I encountered Caucasian cuisine, but believe me - the difference with homemade is huge. In addition to being very healthy, this dessert is also suitable for consumption during fasting.

My version of Gozinaki today contains:

300 g of walnuts

50 g of sesame

100 tsp honey

50 g of sugar

A few drops of lemon and a pinch of cinnamon (these ingredients are optional).

The walnuts and sesame are lightly toasted in a dry pan, then the melted honey and sugar are added to them (if you make them in my version, you also add the lemon and cinnamon). Stir well to mix all the ingredients.

After 1-2 minutes, remove from the heat and pour onto baking paper. Cover with another sheet of paper and roll out into a crust of desired thickness.

Before the mixture cools completely, cut it into pieces with a knife. Be careful with the amount you eat, because this incredibly tasty treat is quite high in calories!
