How to make
Grind the tomatoes in a machine that separates the skins and seeds.
If you don't have one, grate them on a grater, but separate the skins.
Coarsely grate 2 onions.
Clean and finely chop a head of garlic.
Heat the olive oil and briefly fry the garlic until it releases its aroma.
Add the tomatoes and grated onion and cook for about an hour until the desired thickness is obtained, by stirring occasionally.
Sometimes I add a few grated carrots. They will give the sauce extra sweetness and thickness. But this is optional.
Once the sauce has reduced by almost half, add salt, sugar, cayenne or sweet paprika, oregano and basil.
Boil the sauce for another 5 minutes, then distribute it in small jars, which need to be sterilized for 15 minutes from the moment of boiling.
You can puree the sauce if you like, I personally don't.
From this amount, I made 12 jars with a capacity of 6.8 fl oz (200 ml).
If you want to make pizza sauce for quick consumption, for example for 1-2 pizzas, reduce the quantities of the products.
For example:
tomatoes - 0.9 lb (400 g)
onion - 1/2 onion
salt - 1/2 tsp.
sugar - 1/2 tsp.
garlic -1- 2 cloves
olive oil - 2 tbsp.
oregano
basil
cayenne or sweet paprika
The method of preparing homemade jarred pizza sauce is the same, but the cooking time will be shorter.
